Chocolate Mint Brownies

I promise to post a healthier recipe next week but in honor of St. Patrick's Day this week I have to share this delicious treat.

Mint Chocolate Brownies

Brownie Base
1 box brownie mix (I use Betty Crocker's Supreme brownie mix)
water, vegetable oil and eggs as called for on brownie box

Filling
3 1/2 cups powdered sugar
1/4 cup butter, softened
1/4 cup whipping cream
1/2 package (3oz.) cream cheese, softened
1/4 teaspoon mint extract
4 drops green food coloring

Topping
1/2 whipping cream
1 bag semisweet chocolate chips (2 cups)
1/2 cup butter (do not use margarine)




Heat oven to 350. Grease bottom only of 9x13inch pan. Make and bake brownies according to package. Cool completely, about 1 hour.

In a large bowl, beat filling ingredients with electric mixer on medium speed until smooth. Spread over cooled brownies. Refrigerate about 1 hour or until set.

Meanwhile, in 2qt non-stick saucepan, heat topping ingredients over medium low heat, stirring constantly, until melted and smooth. Cool about 10 minutes until lukewarm.

Pour topping over filling; spread to cover. Refrigerate uncovered for about 2 hours or until set.

Before cutting into squares, let sit at room temp for about 10 minutes. Store covered in refrigerator,
